Apple Bread

I love an afternoon filled with my favorite song playing, and a delicious smell coming from my oven!  I've made this recipe quite a few times and every time it's oh so delicious.  I had never made apple bread until I read about it in Healthy Cooking magazine.  Again, I'm trying to stay on the healthier side by having items in my house that you don't feel guilty about snacking on.

My husband makes me laugh.  I feel like D thinks I don't feed him.  A few nights ago he completely demolished his dinner, and then continued to eat fudge and a cinnamon roll my mom sent down with my dad.  The boy does have an appetite.  He told me his new year's resolution was to eat slower.  We both eat pretty quickly, but he eats quicker than anyone I know.  That said, yesterday afternoon I made my Apple Bread to spoil him with something good for you and tasty to eat!


{Apple Bread}

Ingredients
3 cups all-purpose flour
1 1/2 cups sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon {I tend to add a little bit more}
2 eggs
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 tsp vanilla extract
3 cups chopped peeled tart apples {I typically use 3 medium/large apples}

Topping
1/2 cup all-purpose flour
1/2 cup sugar
2 Tbsp chopped walnuts
1/3 cup cold butter

In a large bowl, combine the first 6 ingredients.  In another bowl, whisk the eggs, applesauce, oil and vanilla.  Stir into dry ingredients just until moistened.  Fold in apples. Transfer to two 8-in x4-in loaf pans coated with cooking spray.


For topping, combine the flour, sugar and walnuts.  Cut in butter until crumbly. Sprinkle over batter.


Bake at 350 degrees for 45-55 minutes or until a toothpick comes out clean.  Since I add more apples, typically it takes 55-65 minutes.  Just watch so the top doesn't burn.  Cool for 10 minutes before removing from pans to wire rack.
